Steve's Mediterranean Omelet




2 eggs beaten with a splash of milk
Saute:
1/4 cup chopped red bell pepper
2 TBLS  red onion
1 clove garlic
1 TBLS olive oil
Remove from pan and add Egg
Sprinkle omelet with feta, chopped grape tomatoes, chopped fresh spinach, Herbs de Provence, sun-dried tomatoes, and sauted ingred.
